Our olives are grown in the sun-drenched Mediterranean, where long, hot summers, cool coastal evenings, and naturally dry conditions encourage the trees to produce fruit rich in the protective polyphenols that have made Greek olive oil treasured for thousands of years.

The grove is shaped by nature. Mineral-rich soil, fresh sea air, and generations of careful cultivation create an environment where the trees thrive without unnecessary intervention. Every season, the olives mature slowly under the Mediterranean sun, developing the vibrant flavor, peppery finish, and antioxidant-rich profile that define truly exceptional extra virgin olive oil. We harvest early - when the olives are still green and packed with nutrients - and press them within hours to preserve their freshness, aroma, and naturally high polyphenol content. Nothing is refined, blended, or stripped away.
