I did a little research on their site, where I found that it’s an early‑harvest Greek oil and that the brand actually shows the harvest details and lab results, unlike most store bought brands. The polyphenol count is 578 mg/kg, which gives it some real health benefits and explains the strong taste.While doing my research, I found out that typical grocery store olive oil typically has a milder flavor and lower health impact with polyphenols in teh 50-250 mg/kg range. Quality artisanal oil is usually in the 250–500 mg/kg range, and is obviously fresher tasting with better antioxidant content. High‑polyphenol EVOO is in the 500+ mg/kg polyphenol range. This is where you would start seeing those marketed health benefits (heart, brain, longevity) and stronger tasting olive oil that has a peppery taste. It's a much more complex olive oil. There is a sort of artichoke note to it. You can also feel a tingle in the back of the throat, which is a hallmark of early harvest oils.I suggest starting by tasting it straight up and noting the throat tingle. Then drizzle it on bread or veggies to note the differences from other EVOOs. I feel like dipping or finishing are the best uses for this oil; it seems like it would be a shame to bury it in other flavors.This olive oil was well packaged for its trip from Greece. It was in one of those air column wraps and then boxed. I wish every jarred or bottled ingredient came in those.This is an expensive oil because it's early harvest. Early harvested olives only yield about half as much oil as later harvested ripe olives, so there will always be a premium for it. With that in mind this isn't a bad value for a high quality early harvest oil. This seems to be Canope's only product. You can tell right away when you taste this olive oil that it's not your typical grocery store EVOO. It has a little bit of a bite to it. It's green and earthy. It tastes different than regular schmegular olive oil. It will hit you in the back of the throat and it's supposed to. It's peppery and delicious. I like it for bread dipping, veggies or on a salad. Fancy olive oil, love the bottle would be nice for a nice dinner. Very decorative to just put right on your table with guests. I tried it straight from the bottle, and it’s a clean fresh taste. I’m super picky with olive oil. And I really like this one. I added some to cook some veggies in too. One tip is there is a little gold tap to open it. Pull that to get the plastic started. If not it’s quite hard to get the plastic off. It comes with a wooden cap too. Quite fancy. And good stuff!
